Using olives grown on our Boongarrie Estate property, Max & Me olive oil is made from our 4 hectare Keynes Hill olive grove.
Our olives typically ripen about a month after vintage ends. A nearby olive press, Bovalina, extracts the extra-virgin olive oil from the olives.
Our grove consists primarily of Manzanillo trees, with some Pendolino and Kalamata trees interspersed. Our oil is fresh, spicy, and robust. As a young oil, it is excellent on salad leaves, ripe tomatoes, and sourdough bread. After a year or two, the flavors mellow and the oil becomes more creamy, making it perfect for roasting, confiting, and frying.
