In Eden Valley, Cabernet Sauvignon showcases splendid aromas of blackcurrant, violet, and chocolate, along with fine, supple tannins. However, there's one important consideration: during the growing season, Cabernet needs sufficient moisture to develop its remarkable flavors, aromas, and color intensity. In drought years, the wines can become thin, chewy, and exhibit a disjointed tannin structure, leading to Cabernet only being released in favorable years. Eden Valley Cabernets are renowned for their longevity, and a lesser-known fact is that they often outlast even the local Shiraz in terms of aging potential.
