A first-release from Max & Me, the 2017 House Blend Cabernet Shiraz, from our Boongarrie Estate vineyard.
A quirk with Boongarrie vineyard is that the Cabernet and Shiraz are quite often ripe at the same time (typically you’d expect the Cab to ripen a couple of weeks later than the shiraz.)
This happened in 2017, so we picked and fermented half of the batch as a Cab/Shiraz co-ferment (pick date 6/04/2017), and left this cuvee macerating on skins for a month to build the flavours and refine the tannins.
Other parcels were fermented separately. After aging all of the batches in French Oak hogsheads for 18 months, the blend was completed with some extra ‘Bottom Block’ Cab and ‘North Block’ Shiraz, to arrive at a 60/40% Cab Shiraz.
