Our Estate Cabernet Sauvignon is crafted from Cabernet Sauvignon grown on the Boongarrie Estate Bottom Block.
Cabernet is especially suited to Eden Valley, where it expresses beautiful aromas of blackcurrant and violet, chocolate, and fine, supple tannins. There is, however, one caveat. In too dry conditions, the grapes are not good. In order for Cabernet Sauvignon to produce its amazing flavours, aromas, and colour depth, it needs good moisture during the growing season. Drought-year wines have a thin, chewy texture and a disjointed tannin profile. Therefore, we release Cabernet only in good years.
In addition to being structured and noble, Cabernet Sauvignon is the most widely planted red grape variety in the world. They have aromas of dark cassis and violets and are full-bodied. There is a fine tannin and a long flavour. They are particularly suitable for cellaring for a long period of time. In Eden Valley Cabernets, a little-known fact is that they can often last longer than local Shiraz.
